Why am I coming across as rude when I'm nervous despite not intending to?

I snap at my partner, block friends from calling me, and even shoot off occasional cold texts that I later regret. The worst is, I don't intend to be rude. It's as if my mind goes into survival mode and everything comes across as threatening. Why do I come across as rude when I'm anxious when I don't intend to? I would like to know if this is a symptom of the general anxiety disorder and how to avoid hurting people unintentionally.
